Cumin, Coriander, Sumac, Aleppo Pepper, Black Mustard Seed: CK's Top Five Spices

Not sure these would be the top five on my list. And two of them we've been using for ages. Certainly cumin. Why doesn't he have us toast it for? I just love it when the aroma permeates the entire house afterwards, especially on a gray cold or dingy day But still we love, love, love Mr. Kimball, even way before Milk Street. So can never get enough! For the record though, perhaps the original "five spices," one could argue are those of the Chinese Five Spice blend, maybe even more suitable to the winter months. They are: cinnamon, cloves, Szechuan pepper, fennel seeds and star anise. (Ming Tsai adds a sixth spice, ground ginger.)
